Farming is neat.

Hi, it's Declan Timm again. We still have over fifty chickens, three cows, three goats, one feisty cat, and two dogs. We have now successfully butchered all our pigs. We have 5 freezers packed with pork ready to sell! My favorite are the pork chops with homemade chimichurri sauce. You can find that recipe at the bottom of the page.


Our grandma was over for the weekend and we taught her all about the farm and Stranger Things. The weather here has been bitterly cold so most chickens aren't laying eggs and doing chores is terrible. Stay warm everyone!


Homemade Chimichurri Sauce

Olive Oil - 1/2 cup

Parsley - 1/2 cup, fresh, finely chopped

Cilantro - 1/4 cup, fresh, finely chopped

Lemon Juice - half lemon, squeezed

Oregano - 1 teaspoon dried oregano

Salt - 1 teaspoon - but add to taste

Garlic - 3-4 cloves should do - but we love garlic so tend to lean to 4

Red Wine Vinegar - 2 Tablespoons

Pepper - to taste (1/2 teaspoon should do)


*you could also add a shallot, but my Dad didn't have those!


Mix it all together and let it sit to let the flavors come together. My dad marinated the pork chops with this and we added it on top after they were cooked. It is that good.
